Polka Dot Brownies

I was simply looking for an extraordinary brownie recipe.







So, I pulled out one of my many, many cookbooks, a 1985 

Southern Living one to be exact.  Flipping through the pages 

two pieces of notebook paper fell out with two recipes, in my

handwriting. 







Hum...it was my handwriting from a much earlier period in 

my life.  You know how when you are younger you 

experiment with different styles of writing?  This was my 

period of loops and swirls.  Life was good in 1985-so this just 

had to be a great recipe.  Please, please do not ask me where 

or who I copied this recipe from...It is as much of a 

mystery to me as to you.




But, honestly it won't matter one bit when you bite into this 

heavenly treat.  They are a cross between a bar cookie and 

fudge!  The consistency is amazing and they are oh so, so 

easy.   I made a few little adaptations here and there just to

take them to the next level of pure decadent delight! 





Polka Dot Bar Cookies With Vanilla Frosting & Caramel Icing



Ingredients For Polka Dot Brownies: Preheat Oven to 350 

1 box fudge brownie mix
1/2 cup vegetable oil
2 large eggs
1 1/4 cup white chocolate morsels

1 can vanilla frosting
Caramel Icing (recipe below)

Directions:

Spray a 9x9 inch non-stick pan with Baker's Joy so bar cookies will
not stick.


Combine first 3 ingredients in large mixing bowl stirring well until all
ingredients are well combined, add morsels. Spread into prepared pan and bake for 30 minutes.  Cool in pan for 10 minutes on cooling rack.  Flip pan upside down on cooling rack.  Cool for 45 minutes.
While cooling prepare Caramel Icing.

Ingredients For Caramel Icing: 

This recipe is from Chris at The Cafe Sucre Farine, she is my go to girl for many, many wonderful and dependable recipes.

1/2 cup butter
1 cup dark brown sugar packed
1/2 cup evaporated milk
2 1/2 cups sifted powdered sugar
2 tsp. vanilla


Directions:

In large saucepan, combine butter and brown sugar over medium heat, stirring constantly until butter melts and blends with brown sugar. Continue stirring until smooth and bubbling about 2-3 minutes.

While stirring add milk and bring to gentle boil.  Remove heat . 
Cool to room temperature.  

Add vanilla and powdered sugar-beat well with wooden spoon or wire whisk   If frosting is too thick add more milk, if it is too thin add more powdered sugar. 



Place bar cookies on desired serving plate, frost with vanilla frosting and drizzle Caramel Frosting over the vanilla frosting-that's it!

Note:
Caramel Frosting recipe will make more than is needed for Polka Dot Brownie recipe.  So you may refrigerate Frosting for several days, and bake something else that is wonderful or cut recipe in half!

  14. Jemma, I am more of a white than a chocolate person, but these look amazing! Maybe it's that vanilla frosting. I could surely go for one (maybe 2) of these! Thanks for sharing the recipe with SYC. Pinned.
