Avocado Black Bean Salad With Lime Dressing

I have a wonderful recipe to share with ya'll today. It is healthy, refreshing and it is packed with nutritious goodness too!
This time of the year I am always on the look out for fresh and fun ideas and I just bet you are too.
So if you truly are searching for a great side dish for small Summertime gatherings, picnics or 4th of July festivities well look no further.
This fresh and fabulous Summer Avocado Black Bean Salad with Lime Dressing recipe is a perfect dish for sharing!
There are so many things to love about this salad!
Like it is light and colorful and so simple to assemble.
This Avocado Black Bean Salad fits the bill for any Summer Night and it's easy to transport too.
I served mine with mini naan bread and for dessert the hubs and I had watermelon!

In fact the more I think about this recipe and all of the wonderful ingredients the more I realize that this is a recipe that can be customized.
If you are not a fan of onions just reduce the amount or leave them out altogether.
If spicy is not your gig, just forget the jalapeno or chop it up and put it in a ramekin to have as an add on.
Since our family consists of Dave and I we had plenty of salad leftover, so I just added some
Barilla Rotini to the salad the next night, parboiled some asparagus and wrapped them up in Prosciutto and we had another easy Summer meal!
This Salad may also be used as dip too for a festive Taco Tuesday!
Just serve this avocado black bean salad with tostitos cup chips.
For a casual serving tip I enjoy using ramekins.
Ramekins are just the right size to hold diced onions, olives, cilantro, dips, mayo, mustard, etc...and they also come in such wonderful colors.
Great little accessory for adding a splash of color to any tablescape.
So as you can tell I am sold on this Summer Salad and all of the versatility it brings to the table.

I make a variation of this quite often in the summer time. I don’t like spicy food so I don’t include the jalapeƱo. It’s great to have it in the fridge for a quick lunch with some tortilla chips.
ReplyDeleteOh, this Avocado Black Bean Salad sure looks good....and healthy too! Avocados are a favorite, and I use them in my meals every week. Oh Jemma, I have those same mini bowls in white. I've never seen them in yellow before, how delightful. And your yellow tea pot is sweet - I always smile when I see that. Love that lantern too. ; )
