Vegetable Quiche-Weekend Meal

This simple quiche is one of my "go to," meals. The ingredients
are basic and can be modified to your liking. This quiche can be
served for brunch or for an evening meal. By par-boiling the
vegetables it makes for a fool proof dish.
Depending on time and my mood I have made a homemade pie
crust. On this particular day I did not. This is a deep dish Ritz
frozen pie crust.
Ingredients: Serves 6
(optional ingredients bacon, ham, cauliflower, mushrooms, jalapenos,olives)
1 deep dish frozen pie crust/ or homemade
4 eggs
1/4 cup skim milk
1/4 cup half and half
1/2 cup shredded cheese -Swiss or sharp cheddar
1/4 cup chopped broccoli crowns
1/4 cup chopped red pepper
1/4 cup chopped sweet onion
1/4 cup chopped carrot
1/8 tsp smoked paprika
1/8 tsp garlic powder
dash of ground red pepper
1/4 tsp. salt
1/4 tsp. black pepper
Directions: Preheat Oven to 375 degrees-bake for 45 minutes
Thoroughly rinse all vegetables and coarsely chop. In a medium size saucepan add vegetables and salt cover with water and bring to a boil. Parboil for 5- 7 minutes.
While vegetables are cooking combine eggs, milk, half and half, pepper, paprika, garlic powder and red pepper in a large bowl whisk or beat until frothy.
Drain vegetables well in a colander.(I let them drain for 8 minutes. Prevents quiche from being watery)
Fold in cheese and drained vegetables to egg mixture and immediately pour into unbaked pie crust.
Bake for 45 minutes, remove from oven and let cool for 10 minutes. Serve with your favorite tossed salad or fresh fruit.
Perfect for a quick and nutritious weekend meal!
