Hello folks and greetings from my kitchen to yours! I haven’t shared a recipe in awhile and the one I am sharing today is a new style of cooking for me. I guess I must be on a health kick right now or just plain stubborn, because look at this recipe. Seriously where did I ever get the idea to make Texas Style Stir-fry Cauliflower Rice? I mean the hubby looked me right in the eye and said “cauliflower tastes like dirt.” Did I care? Well I guess not! Because here is the recipe and I actually think it tastes great!
Truly we are watching our waist lines and looking forward to some trips to the Mountains this Summer. Naturally a trip to the mountains means hiking. I absolutely refuse to be huffing and puffing and gasping for oxygen while someone ten years older or for that matter twenty years younger than me nonchalantly hikes by without a single wheezing sound.
We are flatlanders and this actually happened to me one year. I clearly remember hiking in the Rockies and with each turn up the trail I was gasping for air. There was no other choice but to sit down on a nearby boulder to catch my breath. As I was sitting there this spry, fit and vivacious 80 year old woman hiked right past me without so much as an exhale. She sort of looked at me with disdain. ( I can’t blame her!) I mean to tell you, that is just about as bad of feeling as one can have when they are hiking. Humiliation!
I am going to be prepared this year, who knows I might even have the right hiking shoes and hat. I suppose if I look the part, maybe I can fake it. Anyway this recipe is helping us to achieve some healthier and trimmer goals. It is flavorful, colorful and does a nice job of filling in as a carb replacement.
Well, naturally I just had to add jalapenos to this recipe because we do live in Texas and we do love our Tex-Mex! I have pretty much acquired a palette that everything needs to be a bit sassy, spicy and hot in order to taste good. This is certainly a big change from a farm girl who was raised on nothing Spicer than garlic salt! I was even able to use the green onions from my garden and if it had been jalapeno season I could have used them as well.
- 1 Head of Cauliflower, rinsed and sectioned.
- 1 Large jalapeno rinsed, seeded and diced.
- 3 Green onion diced.
- 1 Yellow pepper rinsed, seeded and diced.
- 1 Red pepper rinsed, seeded and diced.
- 3 Cloves of garlic chopped
- 1/2 – 1 Cup of Vegetable Broth
- Dash of Sea Salt
- Dash of Pepper
- 2-3 Tablespoons of Olive Oil
- Garnish with black Olive or Cilantro
- After rinsing and sectioning head of cauliflower place florets into food processor in batches and process until evenly chopped NOT pulverized. Remove “rice,” to another bowl and continue processing until all cauliflower is ‘riced.”
- Heat oil in a pan and Sautee all of the vegetables except the cauliflower until tender crisp. (About 6 minutes)
- Remove these vegetables from the pan and stir-fry the cauliflower alone for about 3 minutes.
- Mix all of the above ingredients together including cauliflower and stir-fry together until tender or tender crisp. About 3-5 minutes, adding vegetable broth as necessary for the consistency that you would like.
- Serve in individual bowls and top with a black olive or cilantro.
