The combination of roasted potatoes, crumbled bacon, and creamy herb dressing ignites the taste buds. Gorgeous flavor and colors come from the beautiful Purple Fiesta Fingerling Potato, which just happens to come from my home state of Idaho!

Potato Facts

  • Potatoes contain no fat.
  • They are low in calories and rich in vitamins and minerals.
  • Potatoes are high in heart- healthy fiber

Olive Oil

  • A good, organic, cold pressed olive oil adds delicious full bodied flavor to any dish.
  • For this recipe I used a medium everyday Olive oil because we are roasting these beautiful potatoes. My go to is always California Olive Ranch 

Dried Herbs and Kosher Salt


Garlic Powder or Fresh Minced

  • Garlic is one of the KEY ingredients in this wonderful dish.
  • If time is a factor in making smashed roasted fingerling potato salad forget mincing fresh garlic and head straight to your spice rack and generously sprinkle garlic powder over the potatoes before roasting.

Bacon

  • Have you noticed that bacon seems to make everything in life better?  
  • For this recipe use regular bacon not thick and splurge on a good quality brand.

Serve Warm, Cold, Or Room Temperature

  • Smashed Roasted Fingerling Potato Salad can be served warm, cold or room temperature.
  • Refrigerating overnight will meld the flavors and heighten the taste, so salad can be made the day before serving.
  • Roasted Fingerling Potato Salad will keep nicely up to 2 day if covered and refrigerated.

  Instructions For Roasting Fingerling Potatoes

  • Roast in preheated 400 degree oven for 15- minutes. Broil for 5 minutes.
  • Wash potatoes, dry them and slice them half.
  • Place them on a baking sheet.
  • Coat with a 1/4 cup of olive oil.
  • Sprinkle with 1 tablespoon dried Oregano, 1 tablespoon garlic powder, 1 tablespoon kosher salt, 1/2 teaspoon dried sage, 1/2 teaspoon dried rosemary.
  • Toss olive oil, potatoes and herbs together and spread out evenly on baking sheet.   
  • Remove from oven when potatoes are tender.

How to Smash Roasted Fingerling Potatoes

  • Remove potatoes from oven and using a small drinking glass press down on the potatoes.
  • Repeat until potatoes are smashed.

 Fingerling Potato Salad Add-Ins

  • Finely chop 2 stalks celery
  • 4 green onions chopped
  • Fry 6 slices of bacon until crisp and crumble them in mixing bowl along with celery and onions.

While potatoes are roasting make Salad Dressing.

Smashed Roasted Fingerling Potato Salad Dressing Recipe

  • 1 cup sour cream
  • 1/4 cup to 1/2 cup mayonnaise 
  • 1 tablespoon lemon juice
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon celery seed
  • 1 teaspoon kosher salt
  • 1-2 teaspoon black pepper
  • Wisk together and pour over roasted potatoes, celery, onions, and bacon.

Transfer smashed and roasted potatoes to serving bowl fold in bacon, celery, onion and dressing.

Roasted Smashed Fingerling Potato Salad

Roasted Smashed Fingerling Potato Salad

This colorful Potato Salad is filled with the WOW factor. It is loaded with crisp bacon, celery, onions, herbs and tender roasted fingerling potatoes. It is topped off with a sour cream and Dijon mustard dressing.

Ingredients

  • Roast in preheated 400 degree oven for 15-20 minutes. Broil last 5 minutes to "crisp," them up.
  • 1.5 pound bag of fingerling potatoes washed and dried.
  • Baking sheet
  •  1/4 cup of olive oil.
  •  1 tablespoon dried Oregano.
  • 1 tablespoon garlic powder.
  • 1 tablespoon kosher salt.
  • 1/2 teaspoon dried Sage.
  • 1/2 teaspoon dried Rosemary.
  • *********************************************
  • While potatoes are roasting.
  • Fry 6 slices of bacon, drain and crumble
  • 2 celery stalks finely chopped.
  • 4 green onions diced.
  • Set aside the celery, onions and bacon in large serving bowl.
  • Add Roasted Potatoes to bacon, celery, and onions.
Roasted Fingerling Potato Salad Dressing
  • 1 cup sour cream
  • 1/4 -1/2 cup mayonnaise 
  • 1 tablespoon lemon juice
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon celery seed
  • 1 teaspoon kosher salt
  • 2 teaspoon black pepper
  • Wisk together all ingredients and pour over roasted smashed potatoes.

Instructions

  1. Preheat oven to 450 degrees.
  2. Wash potatoes, pat them dry and slice them in half.
  3. Place them on a baking sheet.
  4. Coat with a 1/4 cup of olive oil.
  5. Sprinkle with dried Oregano, garlic powder, salt, sage and rosemary.
  6. Toss potatoes, herbs, and olive together on baking sheet.
  7. Spread out evenly on baking sheet. 
  8. Roast potatoes for 15-20 minutes or until fork tender.
  9. Broil on high heat for last 2-3 minutes to get them crispy.
  10. Remove from oven and using a glass jar or fork press firmly down on potatoes to "smash them.

Each serving provides 501 kcal, 5g protein, 50g carbohydrates (of which 36g sugars), 31g fat (of which 19g saturates), 0.8g fibre and 0.8g salt (serving with 300g of jam and 300ml cream).
